Garlic Cashew Aioli

This delicious creamy aioli is great as a dip for fresh or roast vegetables or use as a spread for wraps, burgers and sandwiches.

Ingredients

  • 1 cup cashews
  • 2 tablespoons olive oil
  • 3 garlic cloves
  • 2 lemons juiced
  • ¼ teaspoon Celtic Sea salt
  • ½ to 1 cup water

Method

  1. Place cashews, olive oil, garlic, lemon juice, sea salt and 1/2 cup of water in a blender.
  2. Blend until smooth for a thicker aioli.
  3. For a thinner consistency, continue to stream in another ½ cup of water while blending.
  4. Options: Add 1 cup of fresh basil leaves.
